Understanding Wagyu Beef Pricing

Wagyu (meaning "Japanese cattle") pricing reflects the extraordinary care in raising these animals, the intensive marbling that develops over 2-3 years of feeding, and strict grading standards. Only beef scoring BMS 8-12 on the marbling scale qualifies as A5, the highest grade.

Authentic Kobe beef is even more exclusive: it must come from Tajima-gushi cattle raised in Hyogo Prefecture and meet extremely strict quality criteria. Fewer than 5,000 cattle qualify annually, making genuine Kobe among the rarest proteins in the world.
